Chicken Curry
Serving Size : 2
Ingredients:
- 1-2lbs of chicken breast, cut into bite sized pieces
- 1 onion, diced
- 3 tablespoons of minced garlic
- 1 tablespoon of ginger, minced
- 4 tablespoons of curry powder
- 16 oz of coconut milk
- 8 oz can of diced tomatoes
- 16 oz of tomato sauce
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions:
- Heat up the olive oil on a pan to medium heat and add the diced onions till it's slightly brown.
- Add the garlic and ginger for 1 minute until fragrant.
- Add chicken and cook until cooked.
- Add coconut milk, diced tomatoes, and tomato sauce. Stir to combine.
- Add curry powder and stir for 1 minute.
- Simmer for 20-30 minutes until the sauce thickens. Add salt and pepper to taste.
- Optional but encouraged: Always taste the sauce so you can add seasonings to your liking. I always like
extra seasonings like
paprika, cayenne pepper, and more curry powder for extra flavor.
- Serve over rice and enjoy!
